FarmerThe best coffees are grown 1.000 to 2.500 meters above sea lavel, where the farmer takes care of his trees all through the year. During the harvest season the coffee cherries are carefully hand picked over several rounds and the beans inside are separated from the pulp through a fermentation process.
The farmers ability to control this process and his thoroughness in the following sorting have great impact on the quality of the final coffee.
RoasterIn cooperation with the farmer the roast master selects the best green beans. As a starting point the best beans should have a good sweetness and high cleanliness since this shows that the farmer has control and thoroughness. Unroasted coffee beans are probably not at all what you expect them to be. Green un-roasted coffee does not taste or smell of coffee at all, but more like hay or dried green pees. Coffee develops its characteristic flavour only during roasting.
The aroma and taste can take many directions during the roasting process. Our roast master Peter Dupont has specialized in roast profiling – the heat curve the beans are exposed to during roasting. By hand roasting in small batches of only 10 kilos in a Probat gas-fired drum roaster Peter optimizes the taste and aroma.
This is no mechanical process. In fact, we believe roasting is a delicate craftsmanship, little short of an art form, that must be mastered with the use of all senses: sight, hearing, smell, taste, touch and gut feeling. Changes in air humidity, temperature and bean moisture content play vital roles in how the roast should be carried out.
We roast daily and deliver the coffee fresh to our customers. Every batch is cupped thoroughly to ensure the quality.
BaristaThe most significant responsibility of the Barista is to brew the best coffee and give the customer an insight into the world of coffee. The Barista has to know the coffee – where it comes from, how it’s grown, how it’s been roasted and how fresh it is. Knowledge about equipment and brewing is likewise essential.
The ability to guide the customers in the world of coffee creates an experience surrounding the coffee and provides the customer with an option to find the perfect coffee. We provide all our customers with barista training and coffee education in our effort to present exceptional coffee experiences.
